Peras al vino

RECETA:
Las peras al vino son un acompañamiento ideal para las carnes y además son de esas recetas de siempre que resultan fáciles de preparar, económicas y prácticas ya que las puedas dejar preparadas el día antes y tan sólo calentarlas en el momento de servirlas.

Los ingredientes para 6 personas son:
12 Peras blanquilla
2 litros de vino tinto (a poder ser del Priorat o la Terra Alta... No es solamente porque son los mejores del mundo, sino porque tienen mucho cuerpo y eso nos irá bien para este plato)
1 rama de canela
3 cucharadas de azúcar
1 limón

En primer lugar pelaremos las peras y las frotaremos con el limón para que no se oxiden y se pongan oscuras. Mientras tanto, llevaremos el vino a ebullición con la rama de canela y las 3 cucharadas de azúcar. Una vez rompa a hervir, apagaremos el fuego.
Cuando tengamos todas las peras listas, las pondremos en la olla y volveremos a ponerlas al fuego pero esta vez al mínimo, para mantener el calor pero sin llegar a hervir.
Así, se han de hacer a fuego lento durante un par de horas. Pasado este tiempo, se retirarán del fuego y se dejarán reposar hasta que se enfríen.
La gracia de las peras al vino es que absorvan el vino pero sin quedar demasiado blandas,  han de quedar consistentes. Otra manera de saber que nos han quedado bien es comprobar que al cortarlas, el interior no ha quedado blanco, sino que también tiene el color del vino.

RECEIPE:
Pears

Ingredients for 6 people are:
12 Pears
2 liters of red wine (if it's possible, from the Priorat and Terra Alta... not only because they are the best wines in the world, but because they have great body and that will be fine for this dish)
1 cinnamon stick
3 tablespoons sugar
1 lemon

First peel the pears and rub them with lemon. Meanwhile, bring the wine into a pot with the cinnamon stick and 3 tablespoons sugar. Once it starts to boil, turn off heat.
Put the pears in the pot and put it in the fire again, but this time to a minimum to keep warm but without boiling.Keep the pot like this for a couple of hours. After this time, remove it from the heat and let stand until it gets cool.
If you want to know if pears in wine are ok, you have to get sure that the pears have absorb the wine, but without being too soft and also the interior has not to be white.
